Scaled to 1 egg sandwich
1 0.33-second spray Avocado Oil Spray (0.2 g)
1 large Egg (50 g)
1 muffin English muffin (66 g)
1 tbsp Basil Pesto (15 g)
1/4 cup Arugula (5 g)
Directions are for original recipe of 1 egg sandwich
Spray pan with cooking spray and heat over medium heat. Crack the egg into the pan and cook as desired.
Toast english muffin and spread both sides with pesto. Add egg to bottom of muffin.
Add arugula into pan and cook briefly until wilted. Add to muffin, top with other half, and serve.
