This classic Basque-inspired dish features soft, simmered peppers, tomatoes, and onions infused with garlic and smoked paprika, creating a rich and flavorful base for perfectly cooked eggs. Served with crusty bread, it’s a simple yet satisfying meal.

Eggs Piperade Recipe:

Ingredients

Scaled to 1 serving

  • 1 tbsp Avocado oil (14 g)

  • 1/4 medium Onions (28 g)
    (Chopped)

  • 1/4 medium Red bell pepper (30 g)
    (Chopped)

  • 1/8 pepper, large Yellow peppers (23 g)
    (Chopped)

  • 1/2 cloves, minced Garlic (1.5 g)

  • 1/2 medium whole Tomatoes (62 g)
    (Chopped)

  • 1 1/2 extra large Egg (84 g)

  • 1/4 tsp Thyme (0.2 g)

  • 0.8 tsp Parsley (0.4 g)

  • 4 oz Sourdough bread (113 g)

Directions

Directions are for original recipe of 4 serving

  1. Heat avocado oil in a large frying pan over medium-high heat.

  2. Add onion, bell peppers, and garlic. Cover and cook, stirring occasionally, until very tender (8-10 minutes).

  3. Add tomatoes, season to taste, and simmer uncovered until beginning to break down (4-5 minutes).

  4. Gently stir in eggs and cook, stirring occasionally, until scrambled (3-4 minutes).

  5. Scatter with thyme and parsley and serve hot with toasted sourdough bread. Enjoy!
