Roasted Chickpea Gyros Recipe:

Ingredients

Scaled to 4 serving

  • 14 oz Chickpeas (425 grams)

  • 1 tbsp Olive oil (14 grams)

  • 1 tbsp Paprika (6.9 grams)

  • 1 tsp Pepper (2.1 grams)

  • 1/2 tsp Cayenne pepper (0.9 grams)

  • 1/4 tsp Salt (1.5 grams)

  • 4 pita, large Pita bread (flatbreads)(256 grams)

  • 8 tbsp Tzatziki (120 grams)

  • 1/4 medium Onions (28 grams)

  • 2 leaf outer Lettuce (56 grams)

  • 1 medium whole Tomatoes (123 grams)

Directions

Directions are based on the original recipe of 4 servings

  1. Chop lettuce leaves, slice tomatoes and red onions. Set aside.

  2. Drain and rinse chickpeas. Pat chickpeas dry with paper towel, removing any skins that may come off.

  3. Gently toss chickpeas with oil, paprika, black pepper, cayenne pepper, and salt.

  4. Spread chickpeas onto a greased rimmed baking sheet and roast at 400 degrees F (200 C) for about 20 minutes, until lightly browned but not hard.

  5. Spread some tzatziki onto one side of a pita, then sprinkle in ¼ of the chickpeas and add veggies. Fold in half and enjoy!
