4 oz Pork tenderloin (113 g)
1/4 cup Parmesan cheese (20 g)
1/8 tsp, leaves Oregano (0.1 g)
1/2 dash Pepper (0.1 g)
1/2 dash Salt (0.2 g)
1 tsp Garlic (2.8 g)
1/2 tbsp Butter (7.1 g)
2 tbsp Olive oil (27 g)
1/2 cup Spinach (15 g)
2 slice Havarti Cheese (38 g)
1/2 tbsp Dijon mustard (7.5 g)
Directions are for original recipe of 6 serving
Preheat the oven to 400°F.
Butterfly the pork loin.
In a large ziplock bag, combine Parmesan cheese, oregano, pepper, salt, minced garlic, and olive oil. Add the pork loin and shake until fully coated.
Place the pork loin in a butter-greased baking dish and spread any remaining mixture on top.
Stuff the pork loin with spinach and Havarti slices, then close it. Secure with baking twine if desired. Spread Dijon mustard on top.
Bake in the oven for 45 minutes or until the pork reaches an internal temperature of 145°F. Let rest for 5 minutes, remove twine if used, slice, and serve.
