Hello Healthy Meal Preppers!

It doesn't get much easier than this. We are a once-a-month-Costco fam and canned chicken is staple in our pantry.

Have you ever made your own mayonnaise? It's sooooo easy. I do it in our little personal blender (like this one on Amazon). I use this thing multiple times a week. I'll try to remember to film myself the next time I make it. I use avocado oil. It's better than store-bought in my opinion. You'll have to plan ahead if you want the Tarragon, unless you're fancy and always have it on hand. If you are, props.


Tarragon and Dijon Chicken Salad Recipe:

Per 1 serving: 112 Calories • 1.9g Carbs (0.2g Fiber) • 5.4g Fat • 13.3g Protein

10 minutes to prep, 20 minutes to cook


Ingredients

Scaled to 4 serving

  • 1 cup Canned chicken (205g)

  • 1 1/4 tbsp Mayonnaise-like dressing (18.4g)

  • 3 tsp Dijon mustard (15g)

  • 3 tsp, leaves Tarragon (1.8g)

  • 1 tbsp Lemon juice (15g)

Directions

Directions are based on the original recipe of 4 servings

  1. Combine all ingredients in a bowl and mix well. Use as desired. Enjoy!
