Chicken Veggie Goulash Recipe:

Per serving: 379 Calories 38.8g Carbs (10.7g Fiber) 4.6g Fat 35.3g Protein

Ingredients

Scaled to 1 serving

  • 1 breast fillet Chicken breast (118 g)

  • 1/2 large Green bell pepper (82 g)

  • 1/2 large Red bell pepper (82 g)

  • 1/4 medium Onions (28 g)

  • 1/2 head medium Cauliflower (294 g)

  • 1 tbsp Tomato paste (16 g)

  • 1 dash Pepper (0.1 g)

  • 1 serving Table Blend Salt Free Seasoning Blend (1 g)

  • 1/2 tsp Crushed red pepper flakes (0.2 g)

  • 1 tsp, leaves Oregano (1 g)

  • 1 1/2 leaf, whole Basil (0.8 g)

  • 1/2 tsp Garlic powder (1.6 g)

  • 2 tbsp Lime juice (30 g)

Directions

Directions are for original recipe of 2 serving

  1. Bring a pot of water to boil. Meanwhile, slice bell peppers and onion, and chop cauliflower.

  2. Add chicken to water and boil for 10-15 minutes, or until chicken is cooked through and no longer pink. Drain, set aside to cool slightly, and chop into bite sized pieces.

  3. Add all ingredients except chicken and lime juice to a sauce pan. Cover and cook on med-high until veggies are to your textural preference.

  4. Mix in the chicken and lime juice.

  5. Serve and enjoy!
