Tender chicken breasts are rolled with slices of savory ham and melty mozzarella, then seared and baked in a light white wine and chicken stock sauce. It’s a quick, low-carb, high-protein dish that feels gourmet—but is simple enough for weeknight prep.

1 breast fillet Chicken breast (118 g) (Butterflied)
1/16 tsp Salt (0.2 g)
3/16 tsp Pepper (0.3 g)
1 slice Sliced ham (28 g)
1 oz Mozzarella cheese (28 g)
1/2 tsp Olive oil (2.2 g)
7/16 fl oz White wine (12 g)
1/3 tbsp Chicken stock (5 g)
Directions are based on the original recipe of 6 servings
Preheat oven to 350°F and place a rack in the middle. Flatten chicken cutlets between sheets of plastic wrap to about ¼-inch thickness using a meat mallet. Season with some of the salt and pepper.
Lay chicken cutlets on a working surface, top each with a slice of ham and mozzarella. Roll up from a narrow end and secure with kitchen twine or toothpicks. Season with remaining salt and pepper.
Heat olive oil in a 10-inch oven-proof nonstick skillet over medium-high heat. Place chicken seam-side up in the skillet and brown lightly. Turn chicken, add white wine, and let it evaporate.
Add chicken stock to the skillet and transfer to the oven. Bake for 15 to 20 minutes or until cooked through. Remove from oven, slice each roll on a slight bias into 5 pieces, drizzle with pan juices, and serve.
