It’s an easy one-pan meal that’s great for meal prep and even better the next day. Classic Eastern European comfort food, lightened up and ready in under 45 minutes.
10 minutes to prep, 35 minutes to cook
Scaled to 1 serving
1/4 dash Pepper (0 g) (To taste)
1/4 cup Chicken broth (60 g)
1/2 tbsp Paprika (3.5 g)
1/2 tbsp Butter (7.1 g)
1/4 tsp Cayenne pepper (0.5 g)
1/2 cup, chopped Onions (80 g)
2 chicken thighs, bone removed (188 g)
1/4 dash Salt (0.1 g) (To taste)
2 tbsp Sour cream (30 g)
Directions are based on the original recipe of 6 servings
Salt the chicken pieces well and let them sit at room temperature while preparing the onions. Slice the onions lengthwise.
Heat a large sauté pan over medium-high heat and melt the butter. Pat the chicken pieces dry and place them skin-side down in the pan. Cook for 4-5 minutes on one side until well browned, then turn over and cook for another 2-3 minutes. Remove the chicken and set aside.
Add the sliced onions to the pan, stirring occasionally and scraping up the browned bits from the chicken, until lightly browned, about 7 minutes.
Stir in the paprika and black pepper. Add the chicken broth, scraping up any browned bits, then nestle the chicken pieces back into the pan. Cover and simmer for 20-25 minutes until the chicken is cooked through. Remove from heat.
Remove the chicken from the pan. Allow the pan to cool slightly, then slowly stir in the sour cream and add salt to taste. Warm through if needed. Return the chicken to the pan, coating with the sauce.
Serve and enjoy.
