This protein-packed dish features juicy chicken breasts pan-seared to golden perfection, then topped with a zesty pan sauce made with Dijon, fresh herbs, lime, and a splash of rum. It comes together in under 30 minutes but tastes like something you'd find in a bistro.

Chicken Diane Recipe:

Ingredients

Scaled to 1 serving

  • 2 breast fillet Chicken breast (236 g)

  • 1/8 tsp Salt (0.8 g)

  • 1/8 tsp Pepper (0.3 g)

  • 1/2 tbsp Olive oil (6.8 g)

  • 1/2 tbsp Butter (7.1 g)

  • 3/4 tbsp chopped Chives (2.2 g)

  • 1/8 fruit Limes (8.4 g)

  • 3/4 tbsp Parsley (2.8 g)

  • 1/2 tsp Dijon mustard (2.5 g)

  • 1 tbsp Chicken broth (15 g)

  • 1/4 fl oz Rum (6.9 g)

Directions

Directions are based on the original recipe of 4 servings

  1. Place chicken breast halves between wax paper and pound slightly with mallet. Sprinkle with salt and pepper.

  2. Heat 1 tbsp each oil and butter in large skillet. Cook chicken over high heat 4 minutes each side or until cooked through and no longer pink. Transfer to a warm serving platter.

  3. Add chives, lime, rum (you can also use brandy or wine), parsley, and mustard to pan, whisking constantly for 15 seconds. Whisk in broth. Stir until sauce is smooth. Whisk in remaining butter and oil.

  4. Pour sauce over chicken and serve immediately.

  5. Enjoy!
